There is something to be said about light desserts when they are done right. They can easily become a classic. Take the “banana” ice cream as an example. Back in my teen years (before I was a dietitian!) I loved ice cream (and admittedly still do) but knew it wasn’t any good for health, and imagine my delight when I discovered frozen bananas could be transformed into a luscious and creamy ice cream substitute just on its own by whipping up with a fork. Texturally it’s similar to real ice cream, and the natural sugars from the banana was a perfect sweetener in itself without needing added sugars.

3 Minute Banana Blueberry Ice Cream
Serves : 4 Time : 3 mins
Ingredients :
- 1 cup frozen mixed berries
- 3 large frozen bananas
- 120ml low-fat milk
Preparation :
1. Peel and chop the frozen bananas.
2. Combine all ingredients in a food processor until smooth.
3. Serve immediately.
